Since he has a goal in mind for the story's ending, it wouldn't make sense for him to continue the story longer than necessary. Jujutsu Kaisen is written very purposefully, with each death, battle, and interaction pushing the story towards its conclusion and further developing the characters and plot. While many will be sad to see the series end, it's more important for Akutami to properly execute the storyline he created.
Especially recently, Jujutsu Kaisen has been absolutely filled with brutal deaths. The main characters are dropping like flies in every chapter, and one of the most terrifying and difficult things for fans is The Loss of Gojo Satoru. Although not a main character, Gojo is a fan-favorite witch who adds humor and charm to the series. His death marked a turning point in Jujutsu Kaisen, giving him the opportunity to “pass the torch” to his successors Yuji Itadori and Yuta Okkotsu. However, Gojo wasn't the only epic death. At this point, Yuji has lost almost everyone close to him.

By removing these other characters from the story, Akutami also really put the spotlight on Yuji, making him pretty much the only hero capable of stopping SukunaBy controversially killing off many characters, Akutami gave Itadori the most important task, hoping to be the one to kill the Curse King.
The true ending of Jujutsu Kaisen is obviously unknown to anyone except Akutami, but Yuji killing Sukuna himself would be a great choice since he is the main character and has witnessed Sukuna unjustly murdering many of his comrades. The story seems to be slowly approaching this point, and while some fans hope that Jujutsu Kaisen can last for years to come, this would actually have a negative impact on the story.
