One of the greatest powers in Dragon ball is the concept of Fusion and it has been a staple in the series since its first introduction. The Fusion technique was first introduced in the Buu Saga when Goten and Trunks learned the fusion technique to become Gotenks to fight against Majin Buu. Fusion fuses two individuals as they become new entities with a combination of the original character's traits and abilities, and power surpassing the sum of both.
There are two types of Fusion used in the Buu Saga: Metamoran Fusion Dance and Potara Earrings. This dance requires both individuals to perform a dance that requires perfect synchronization for the fusion to work. The Potara fusion is performed when both individuals wear one of the Potara earrings, artifacts of the gods, to fuse into one entity. This fusion is permanent but only when performed by two Supreme Kai, otherwise it lasts for an hour, while the Metamoran fusion lasts for thirty minutes.
Goku and Vegeta used the Potara earrings to become Vegito when they fought Buu. This is when Vegeta started complaining about Fusion and his hatred for the concept only grew from there. While the usual explanation is that he hated sharing a body with Goku, there is a deeper reason that becomes more apparent as you learn more about his character.

Using Fusion means he is essentially borrowing Goku's power to fight because it annoys Vegeta and hurts his pride as a warrior, which is why both Saiyans refused to use Potara again against Buu.

Whenever Vegeta agrees to fuse with Goku, it is just because they have no other choice and must combine to defeat the enemy they face. In all of these cases, what is at stake is not only their pride as warriors, but also the survival of their friends, family, and the entire universe. However, even in these extreme cases, Vegeta always complains about Fusion, especially since he has to combine not only his power but also his mind with Goku's to become Vegito or Gogeta.
While Vegeta may respect Goku's strength, he also hates his personality, meaning he's afraid of sharing his mind with Goku. While Dragon Ball has never addressed what it means for two bodies and minds to merge into one, it's easy to imagine that this would be an intense, perhaps life-changing experience. While Goku's aloof personality means he probably doesn't care, Vegeta takes a serious approach to life and The Fusion experience must have felt like a violation to him.considering his strong personality.
